I was just wondering what the difference is between the NORTH AMERICA map compared to the USA and CANADA map are. Is one better than the other or more upto date?

The map is more detailed in terms of having water displayed etc. I also believe the POI.dat file is better on the North America map.

What Pedro said. More detailed maps (and in some cases, more roads) and more POIs.

Yup, it shows dirt roads, more POI categories, large bodies of water, parks etc.
