TomTom's don't especially like to play off road. If the trails are something that is numbered/named then chances are they may be mapped, but if they're just trails, it's probably not going to help much (at least without some help of a 3rd party interface - No, I don't know any.)

It could probably be done, but the method is so arcane that I know of no one that has ever actually used the feature. It's also very time consuming if you want fairly high res maps and need to cover a large area. TomTom's native map file format has never been cracked by anyone (yet) and as a result, there are no 3rd party specialty maps for TomTom the way there are for Garmin (whose maps were reverse engineered a few years back).

You'd need to be able to get your map converted to a jpg, gif or bmp image file, and geolocate the 4 corners, and create a file that points to the image file and defines the points you found. If you can view the map on your PCs screen (or segments of it at a time, at least) and use a screen capture program, nearly any map format can be converted with TomTom's method.

As for using it -- TomTom doesn't support an "off road" mode, so until you get far enough off any road that is on a TomTom map, it will try to assume you're actually still on it. That feature is useful for mapped roads, but a bugger once you wander off into the weeds. Takes about 200' or more before it gives up thinking you're on a road.
